Tangerine-Glazed Carrots

Ingredients

  • 2 pounds carrots
  • 1/4 cup cider vinegar
  • juice of 6 tangerines
  • 2 teaspoons salt
  • pepper
  • 2 tablespoons
  • sliced scallions

Preparation

Step 1

Simmer carrots (cut into chunks) in a skillet with cider vinegar, the tangerine juice and salt until the carrots are tender, 8 to 10 minutes. Season with pepper and stir in butter. Top with sliced scallions.
