Sweet Potato Casserole

Ingredients

  • Topping:
  • 3 lbs sweet potatoes, peeled and chopped
  • 1 cup half & half or 1/2 cup Evaporated Milk
  • 1/3 cup packed brown sugar
  • 2 TB Butter
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 1/4 cups cornflakes or special K cereal, crushed
  • 1/4 cup chopped pecans
  • 1 tablespoon brown sugar
  • 1 tablespoon melted butter
  • 1 1/4 cups miniature marshmallows

Preparation

Step 1

Microwave potatoes on HIGH for 16 minutes or until tender. Let stand 5 minutes.

Cut potatoes in half and scoop out pulp into large bowl. Add evaporated milk, sugar, salt, butter, vanilla and spices.

Beat with mixer until smooth. Add in eggs - beat well. Spoon mixture into baking dish coated with cooking spray.

Prepare topping: Stir together crushed cornflakes cereal and next 3 ingredients. Sprinkle over sweet potato mixture in diagonal rows 2 inches apart.

Bake at 350° for 25 minutes. Remove from oven; let stand 10 minutes. Sprinkle miniature marshmallows in alternate rows between cornflake mixture, and bake 5-10 more minutes.
