Ingredients

  • 2 cup sugar
  • 1 c vegetable oil
  • 4 eggs, beaten
  • 2 tsp baking soda
  • 2 1/2 tsp cinnamon
  • 1 tsp vanilla
  • 2 cups flour
  • 1/2 c chopped nuts
  • 3 c grated carrots
  • 1 8-oz pkg cream cheese, softened
  • 1 16-oz box confectioner's sugar
  • 2/3 stick butter, softened
  • 1 cup chopped pecans
  • 2 tsp vanilla

Preparation

Step 1

Combine all ingredients, except carrots in order listed. Beat 3 mintues at medium speed, add carrots. Beat 2 minutes. Turn batter into 3 greased and floured 9-inch round layers pans. Bake at 325 for 30 minutes.
Frosting: Cream softenend cream cheese and butter together, add confectioners sugar and mix well. Stir in pecans and vanilla. Spread on cooled cake, Keep refrigerated.
