Ingredients

  • Dry ingredients:
  • 1.5 cups oil (use 1/2 cup LESS oil w/fresh pumpkin)
  • 2 cups sugar
  • 2 cups pumpkin
  • 4 eggs, one at a time
  • 3 cups flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 3 teaspoons cinnamon
  • 1 teaspoon salt
  • 1 package chocolate chips (any kind)
  • Frosting:
  • 1/2 cup powdered sugar
  • 2 tablespoons milk
  • 1/4-1/2 teaspoon cinnamon

Preparation

Step 1

Cream together the oil, sugar, pumpkin and eggs (one at a time). Sift the dry ingredients and then add them to the cream mixture. Mix well. Fold in chocolate chips. Bake in greased tube pan at 350 degrees for 60-75 minutes. Let cool and then drizzle with frosting.

Frosting: (double if desired)
Lightly beat powdered sugar, cinnamon and milk. Drizzle over cool cake. ENJOY!
