Ingredients

  • Juice from 1 lime (about 2 TB)
  • 3/4 lbs boneless, skinless, chicken thighs (excess fat trimmed off)
  • 2 tsp hot chili powder
  • 2 tsp oil
  • 3 cloved garlic, minced
  • 1 can (14 1/2 oz) jalepeno flavored diced tomatoes
  • 3 cups low sodium chicken broth
  • 1/2 cup shredded sharp cheddar cheese
  • 1 avacado, peeled & pitted, cut into chunks
  • 16 tortilla chips broken in half

Preparation

Step 1

1. Heat broiler, drizzle lime juice over chicken, sprinkle with 1 teaspoon of the chili powder. Coat broiler pan with non stick cooking spray. Broil chicken 5-6 min per side or until 160 with thermometer. Remove and set aside.

2. Heat oil in large deep pot over med heat: add garlic and remaining teaspoon of chili powder. Cook 1 min. Add tomatoes (with their juice), broth and 1 cup of water; bring to a boil, reduce heat to medium-low and cook 10 minutes, covered.

3. To serve: Tear chicken into strips and divide among four bowls. Top each with cheese, avacado and tortilla chips.
