Pumpkin Cookies with Brown Sugar Icing

Ingredients

  • icing:
  • 1 cup sugar
  • 1 cup pumpkin
  • 1/2 cup shortening
  • 2 cups flour
  • 1 tsp baking powser
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup raisins
  • 1/2 cup choppe nuts
  • 1/2 cup brown sugar
  • 3 tbsp butter
  • 1/4 cup milk
  • icing sugar

Preparation

Step 1

Turn oven to 375. Mix sugar, shortening, pumpkin. sitr in dry ingredients, then raisins and nuts. Drop onto ungreased sheet, bake until light brown, about 9 min. Cool and ice.

Icing: Boil 3 first ingredients for 5 min, then add icing sugar to make spreadable. Can thin with more milk if it gets too stiff.
