This is a delicious, light cake that is great anytime.

Ingredients

  • 1 Yellow Cake Mix
  • 1/2 cup oil (vegetable, canola)
  • 4 eggs
  • 1 - 11 oz can of Mandrin Oranges with juice
  • 1 - 8 oz tub cool whip
  • 1 sm box of vanilla instant pudding
  • 1 sm can crushed pineapple, drained

Preparation

Step 1


Preheat oven to 350 degrees.

Spray and lightly flour cake pan(s)


Mix together, cake mix, oil, eggs and mandrin oranges w/juice with mixer until blended, approx 2 minutes.
Batter will be slightly lumpy. Poor into cake pan(s).
Bake for approx 30 minutes or until lightly browned.

Let cool completly.

Frosting:

Mix cool whip (almost room temp, but still slightly firm)
vanilla instant pudding and drained pineapple with mixer until blended. Spread on cooled cake, refrigerate until ready to serve and enjoy...
