Ingredients

  • 2 chicken breasts
  • 1/2 tsp. dried osemary
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 2 tsps. olive oil
  • 2 shallots chopped
  • 1 clove garlic minced
  • 1 1/2 Tbsp. cider vinegar
  • 1/4 cup white wine or chicken stock
  • 1 (14oz) can diced tomatoes with juice
  • 5 kalamata olives pitted and sliced or pimento stuffed
  • green olives sliced
  • 1 tsp. capers
  • some basil

Step 1

Heat oil in skillet over medium-high heat. Saute chicken till browned on both sides. Saute garlic and shallot along with chicken. Add: vinegar, broth, salt, pepper, canned tomatoes, capers, basil, and olives. Cover and cook on low until liquid evaporates.
