Ingredients

  • 16 oz package - Baby Spinach ( organic - washed ready to use)
  • 2 15.5 oz cans Cannellini Beans
  • 1/2 medium Onion (sliced)
  • 2 Hot Banana Peppers, cut in half seeds removed and sliced in pieces
  • 1 red hot pepper (chilli?), cut in half seeds removed and sliced into peices.
  • 4 pieces of Hot Sausage (1/2 lb) or 1/2 lb hot bulk sausage (Optional)
  • 4 tsp minced Garlic
  • 1/4 tsp Hot Red Pepper Flakes
  • Garlic Salt
  • Ground Black Pepper
  • 8 to 10 Hot pepper rings ( Optional)

Step 1

Add a little Olive oil to saute pan. Add garlic, onions, peppers, hot pepper rings to the pan. Add seasonings, Hot red pepper flakes, black pepper and garlic salt. Saute until soft about 5 minutes.
If using the Hot sausage links, Bake at 350 degrees for 1 hour on a broil pan, turn over halfway through cooking. Once cooked, slice into bite size pieces and add to pan mixture. If using Bulk sausage, add to pan and cook for about 5 to 10 minutes until no loner pink.

Add beans, including liquid, to pan and season with garlic salt and black ground pepper.
Cook for about 10 to 15 minutes. Taste and add more seasoning if desired.
Place spinach in ziploc bag, do not close all the way, and cook in microwave for 1 to 2 minutes just to wilt the spinach a little. Add spinach to pan cook for 5 minutes or so.
