Hoisin Pork or Chicken Stir-Fry

Ingredients

  • 2 chicken breasts or 2 meaty pork chops
  • cut into strips or cut into cubes
  • 2 single serve cooked rice
  • 1 Tbsp soy sauce
  • 1 Tbsp cornstarch
  • 1 tsp sesame oil
  • 1 cup broccoli florets
  • 1 cup chopped carrots
  • handful of snow peas (either fresh or frozen)
  • 1 onion wedged
  • 1/4 cup chicken stock or (orange juice, or applejuice)
  • 1/4 cup hoisin sauce

Step 1

Cook rice according to instructions for microwave rice containers. In medium size bowl combine; soy sauce, cornstarch, sesame oil, and hoisin sauce. In wok or skillet; add small amount of oil and heat till hot enough for frying. Add vegetables and stir-fry for 2 mins. Add the meat and stit-fry till almost cooked, then add the liquid mixture to pan and stir-fry till cooked through. Sauce will thicken and coat the meat and vegetables. Serve in bowls with rice covered with the stir-fry mixture.
