Ingredients

1 cup sugar
2 eggs
1 cup raisins
3 tbsp lemon juice and rind
Pinch of salt 1/2 cup cottage cheese, smooth through seive

Step 1

Beat sugar and eggs together, add grated rind and lemon juice, raisins and cream cheese. Fill pastry tarts 1/2 full. Use bought frozen tarts or make your own. Bake for 8 minutes at 450 F - then 350 F until golden brown.
