Baked Potato Casserole

Ingredients
- 8 medium-size potatoes, peeled and chopped into 1" chunks
- 1 tsp. salt
- 1/2 tsp. pepper
- 2 cups shredded cheddar cheese - divided
- 6 slices bacon, cooked and chopped
- 1 small onion, chopped
- 1/2 cup sour cream
- Green onions or parsley for garnish

Preparation
Step 1
Preheat oven to 350.
Cook potatoes 15-20 minutes until tender. Drain. (Can also use baked potatoes, cut into chunks.)
Toss bacon with potatoes.
Mix salt, pepper, 1 1/2 cups cheese, sour cream, and onion. Add to bacon and potatoes and toss.
Put into greased 2 1/2-3 qt. casserole.
Bake 20-25 minutes. Top with remaining cheese and bake another 3-5 minutes.
