Ingredients
- 1/2 cup red wine vinegar
- 6 Tbsp. extra-virgin olive oil
- 1/2 tsp. salt
- 1/2 tsp. ground black pepper
- 2 cloves garlic, minced
- 2 pounds large fresh shrimp, peeled and deveined (tails left on)
- 1/2 cup sour cream
- 1/2 cup mayo
- 1/2 Tbsp. lemon juice
- 1 tsp. Creole Seasoning
- 25 toasted baguette slices
- Garnish: chopped chives

Step 1
In a large bowl, combine vinegar, oil, salt, pepper and garlic with a whisk. Set vinaigrette aside.
In a Dutch oven, bring 2 quarts water to a boil. Add shrimp, and boil for 3 mins. or until pink and firm; drain. Add shrimp to vinaigrette; tossing to coat. Chill about 1 hour or until cool.
Combine sour cream, mayo, lemon juice and creole seasoning. Spread sauce on baguette slices; top each with 1 shrimp. Garnish with fresh chives, if desired.
