Ingredients

  • 2 cups whole wheat pastry flour
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 egg whites, beaten
  • 1 cup plain low fat yogurt
  • 2 T honey
  • 1 tsp prepared mustard
  • 1 cup firmly packed grated cheddar cheese
  • 3 T toasted sunflower seeds

Step 1

Preheat 350 degrees.

Combine the first 4 ingredients in a mixing bowl. In another bowl, beat together the egg whites, yogurt, honey and mustard. COmbine the wet ingredients with the dry, stirring vigorously until thoroughly mixed. Stir in cheese and seeds.

Pour batter into lightly oiled 9 by 5 pan. Bake 45 minutes until the top is brown and crusty. When the loaf pan is cool enough to handle, remove the loaf, place on a rack and allow to cool.
