Ingredients
- Optional topping:
- 1 1/2 c sugar
- 2 C plus 2 TBS flour
- 2 tsp baking soda
- 1 tsp salt
- 2 1/2 tsp cinnamon
- 1 1/3 C oil (I use 1/2 C melted butter in the total amount of 1 1/3 C instead of ALL oil)
- 2 eggs, plus one egg yolk
- 2 tsp vanilla
- 4 cups peeled, chopped apples (I used granny smith and braeburn combined, chopped in various sizes)
- 1/2 c chopped walnuts
- 1/2 C brown sugar
- 1/2 C flour
- 1/4 C butter
- 1/2 C chopped nuts
- 1 1/2 tsp cinnamon
- OR glaze with powdered sugar or cream cheese glaze: equal parts cream cheese and butter, softened, whipped with powdered sugar to taste and thinned with a tsp vanilla and a splash of milk as needed for spreadability
Preparation
Step 1
Preheat oven to 325
Mix sugar and dry ingredients together. Stir in oil, eggs and vanilla. Add apples, nuts and raisins.
Frost with powdered sugar/cream cheese glaze.
