Peanut Noodle Salad

Ingredients

  • 1 package (8 oz) lo mein noodles
  • 1/3 cup reduced-fat peanut butter spread
  • 1/4 cup reduced-sodium soy sauce
  • 1/4 cup orange juice
  • 1/4 teaspoon ground red pepper (cayenne)
  • 3 medium carrots, shredded (2 cups)
  • 1 large red bell pepper, cut into 1/4-inch strips
  • 6 medium green onions, sliced (6 tablespoons)
  • 1/4 cup unsalted dry-roasted peanuts, coarsely chopped

Preparation

Break noodles into thirds. Cook and drain as directed on package, omitting salt. Rinse with cold water; drain.

In small bowl, mix peanut butter, soy sauce, orange juice and red pepper until smooth.

In large bowl, toss noodles, peanut butter mixture and remaining ingredients.
