WHITE CHRISTMAS CHILI

Ingredients
- 8 boneless chicken breasts
- 2 medium onions, chopped
- 2 minced garlic cloves
- 1 TBS oil
- 2 14.5oz cans chicken broth
- 4 15oz cans cannellini beans, rinsed and drained
- 2 4.5oz cans chopped green chilis, undrained(OPTIONAL)
- 1 tsp salt
- 3/4 tsp oregano
- 1 tsp ground cumin
- 1/2 tsp chili powder
- 1/2 tsp black pepper
- 1/8 tsp red pepper
Preparation
Step 1
Cut chicken in bite-sized pieces. Saute the chicken, onion and garlic in the hot oil on high heat for about 10 minutes until done. Put in cooking pot (*or crockpot - see below).
Stir in the broth and next 10 ingredients. Bring to a boil. Reduce heat and simmer, uncovered, for 30 minutes.
*Note from Shirley ~ Sometimes I just cook the chicken and then I put all ingredients in the crockpot to simmer most of the day.
