Panko-Crusted Mushrooms

Ingredients

  • 2 C. Vegetable Oil
  • 2 Lg. Eggs
  • 2 C. Panko Bread Crumbs
  • 12 Lg. White Mushrooms, stems discarded
  • Salt

Preparation

Step 1

In a med. skillet, heat the oil till shimmering. In a sm. bowl, beat the eggs. Spread the panko in a shallow bowl. Dip each mushroom into the egg & let the excess drip off, then coat thoroughly with the panko. Fry the mushrooms, 4 at a time over moderately high heat till golden brown, about 2 min. per side. Drain on a wire rack set over a baking sheet. Season with salt & serve right away.
