Spicy Pumpkin Loaf From Ann

Ingredients
- 1 1/2 cups sifted all purpose flour
- 1 tsp. baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp ground cloves
- 3/4 tsp ground ginger
- 1/2 tsp nutmeg
- 2 eggs
- 3/4 cup sugar
- 1/4 cup corn syrup
- 1/2 cup oil oil
- 1 cup canned pumpkin
- 1/2 cup raisins
- 1/2 cup chopped walnuts

Step 1
Preheat oven to 325. Oil and line the bottom of a 9x5 loaf pan with waxed paper. Sift tog. the first nine ingredients. Beat eggs until light. Add sugar, syrup oil and pumpkin and beat until thoroughly combined. Make a well in the dry ingredients and add the liquid ingredients all at once and stir until well mixed. Add the raisins and walnuts and combine well. Pour batter into prepared loaf pan and bake at 325 for 80 minutes or until cake is done. Remove from rack, after 10 minutes peel off waxed paper and cool on a rack. Wrap to store Slices after 8 hours.
Simple glaze:
1/2 cup corn syrup and 1/4 cup cold water. Bring just to a rolling boil. Use this on quick breads and fruit cakes. When dry, glaze is clear and shiny.
