Ingredients

  • nonstick cooking spray
  • 1 ⁄2 cup half and half
  • 4 ounces unsweetened baking chocolate, chopped
  • 8 tablespoons butter, softened
  • 2 cups sugar substitute
  • 1 tablespoon vanilla extract
  • 5 large eggs
  • 1 ⁄4 cup unsweetened cocoa powder
  • 1 and 1⁄2 cups milled flax seed
  • 2 teaspoons baking powder

Preparation

Step 1

1. Place oven rack in the center position and preheat to 350 degrees. Spray an 8x8 baking dish with nonstick cooking spray.

2. Fill a pot with 2 inches of water and place over medium-high heat, bringing water to a very low simmer. Place a stainless steel bowl over the pot (above the water) to create a double boiler.

3. Add 1⁄4 cup of the half and half, and all of the baking chocolate to the stainless steel bowl, mixing with a rubber spatula for about 2 minutes, until chocolate is melted and mixture is creamy. Set aside to cool down.

4. Place butter in an electric mixer on high speed and beat until fluffy, about 2-3 minutes. Add sugar substitute, vanilla extract, and remaining half and half, and then continue beating as you add the eggs, one at a time.

5. Stop the mixer and add the cocoa powder, milled flax seed, baking powder, melted baking chocolate mixture, and 1⁄4 cup of tap water. Restart the mixer on low and mix well, about another 2 minutes.

6. Spread in greased baking dish and bake 35-40 minutes or until tapping on the center with a wooden spoon feels springy. Cool on a wire rack for 10-15 minutes before refrigerating for 2 hours for the best flavor and a more solid, fudge-like consistency.

George’s Tips | The batter will look gritty, but that is completely normal.

Variation | Add 1⁄2 cup chopped walnuts to the batter before baking to make Walnut Fudge Brownies.
