Pignoli Cookies

Ingredients

  • 2 1/2 pound Almond paste
  • 6 Egg whites
  • 1 box Confectioners Sugar
  • 1 1/2 teaspoon Baking powder
  • 1 pound Pignoli nuts

Preparation

Step 1

Preheat oven to 350 degrees.

Greese two cookie sheets with vegetable cooking spray.

Mix all ingredients except nuts in large bowl with large spoon.

Spread the nuts on a sheet of aluminum foil.

Take two spoons and shape batter into round cookies. Press a cookie into nuts. Use second spoon to transfer cookie onto greased cookie sheet.

Bake for 15 minutes or until light tan. Do not let brown.
