Country Omelette

Ingredients

  • 1 Cup Frozen Hash Browns(uncooked)
  • 2 Tablespoon Butter
  • 1/2 of a Green Bell Pepper(diced=1/2 Cup)
  • 1/2 of a Red Bell Pepper(diced=1/2 Cup)
  • 2 Slices of White Onion(diced=1/2 Cup)
  • 2 Tablespoon minced Celery
  • 5 Ounces diced Ham(1/2 Cup)
  • 1/2 Pound Velvetta Cheese Spread
  • 3 Tablespoon Milk
  • 6 Large Eggs
  • Salt

Preparation

Step 1

Cook the hash browns following the directions on the package
saute' the vegetables in 1 Tablespoon of butter over medium high heat
Cut the Ham into very small cubes and toss it in with the vegetables
After 3 to 5 minutes, when the ham starts to brown it is ready
Prepare the Cheese Sauce
In a small sauce pan
combine the cheese spread with the milk over low heat stir occasionally until melted
be careful not to burn or scorch cheese
using a 12inch skillet
preheat pan over medium heat
beat the eggs in a mixing bowl until smoothand creamy but not foamy
Put 1/2 Tablespoon of butter into the middle of the pan and swirl it around
Pour half of the beaten eggs into the pan
You may beat 3 eggs in one bowl and 3 in another
salt the eggs
when the eggs have cooked fora minute or so pour a quart er of the sauteed filling onto the eggs in a vertical line to the left of the middle leaving enough room so that you will be able to fold over the top and bottom
spoon half of the hash browns parallel to the filling just to the right of the middle
fold the omelette once again this time from the right over the hash browns, then fold it one more time in the same direction into a neat little package
allow it to cook one more minute
carefully slide the omelette out of the pan seam side down
place omelette into a 250 degree oven to keep warm while you prepare the 2nd omelette

when both omelettes are done pour generous amount of cheese sauce on top and then top with remaining warm veggies and ham
