Thai Beef Soup
- 1 container beef base or 2 quarts beef stock
- 3 Tbls olive oil
- 3 Tbls chopped garlic
- 1 bottle Thai sweet chili sauce
- 2 lbs. of beef shoulder or london broil
- 2 Tbls hot sauce
- 2 Tbls balsamic vinegar
- 4 carrots
- 1 stalk celery
- 1 onion - diced
Peel and dice carrots, onion and chop celery.
In 4 quart sauce pan, add oil and turn on medium heat.
Add garlic, carrots, onion and celery and saute for a few minutes. While vegetables are cdooking, prepare beef stock (1 Tbls of base per one quart of hot water).
Add beef stock and bring to simmer. As soup is simmeriing, season beef with salt and pepper. Saute beef to sear (keeping it rare to medium rare).
Remove from heat and let cool for 5 miinutes. Cube beef into bite size portions and add to soup.
Next add vinegar and hot sauce and half bottle of sweet chili sauce. Simmer for 10 minutes. Add salt/pepper to taste and more chili sauce and hot sauce depending on taste.
