Ingredients
- 1 cup butter
- 1 1/2 cups diced (1 inch) sweet potato (about 7 ounces)
- 1 tablespoon salt

Step 1
In a medium saucepan over medium heat, melt the butter. Sweat the sweet potatoes until they are tender, about 10 to 15 minutes. Season with the salt. Puree the sweet potatoes in a blender until completely smooth. Pass through a fine-mesh tamis and chill over ice.
