Black Bean Soup
- 1-19 oz can of undrained black beans in a blender pureed
- 1 T evoo
- 1 small onion finely chopped
- 1 clove garlic
- 1/2 cup chicken broth
- sour cream
Puree beans in blender
Heat evoo in medium size sauce pan. Add small chpped onion and 1 clove chopped garlic. Saute over medium heat until soft.
Add 1/2 cup chicken broth to bean puree. Bring to boil
Serve soup with dollop of sour cream.
ONLY MAKES 4 SERVINGS
