Ingredients
- 1 lb. peeled and chopped potatoes
- 2 large leeks, pale green and white parts only, cleaned and choped chunks
- 3 cups chicken stock or broth
- 1/4 tsp dried thyme
- 3/4 cups half and half
- 2 Tbsp. flour
- 1/4 tsp salt
- 1/4 tsp black pepper

Preparation
Step 1
Combine: potatoes, leeks, broth and seasonings in large saucepan. Bring to a boil, then reduce heat and simmmer until potatoes are tender, about 20 mins. Take one ladle of broth from pot and blend with flour till smooth, then mix in with soup and add half and half, stir untir thickened.
