Baked Apple Halves with Maple Cream

Ingredients
- 2 large apples, halved lengthwise and cored
- 4 teaspoons butter or trans-free margarine, cut into small pieces add to shopping list
- 1/2 cup orange juice
- 1 tablespoon apple cider vinegar
- 1/4 cup evaporated milk
- 2 tablespoons maple syrup

Step 1
Place a small mixing bowl in the refrigerator until needed.
Place the apples, skin side down, in a 4- to 6-quart slow cooker and dot with the butter. Mix the orange juice and vinegar and pour over top.
Cover and cook on low for 2 to 3 hours or until the apples are soft but still hold their shape. Remove to a plate. Pour the juice from the cooker into a small saucepan. Bring to a boil and boil for 3 to 4 minutes or until the liquid is thick and syrupy. Set aside.
Whip the milk and maple syrup in the chilled bowl with an electric mixer on high speed for 3 to 5 minutes or until thickened.
Top each apple half with 1 1/2 tablespoons of maple cream and drizzle with 1 tablespoon reserved fruit syrup.
