Taco Salad

Ingredients

  • Garnish:
  • 4 c. torn romaine
  • 1/2 lb. ground beef
  • 1/2 small onion
  • 2 garlic cloves, chopped
  • 1/2 env. Taco seasoning
  • 1/2 c. water
  • 1/2 can tomato paste
  • 1/2 c. Pace mild salsa
  • sprinkle of lime juice
  • Tortilla chips
  • Any of all of the following: chopped tomatoes, chopped cilantro, grated cheddar cheese, sour cream, guacamole

Preparation

Step 1

Cut romaine into bite sized pieces. Place onto a serving plate.

Brown ground beef, onions and garlic in oil in a skillet. When beef is brown, drain if needed. Add the taco seasoning and water. Simmer until thickened. Add salsa and tomato paste. Heat through.

Put ground beef mixture onto the romaine. Sprinkle lightly with lime juice. Add garnishes.

Serve with tortilla chips.
