Ingredients

  • 4 c flour
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 tbsp ground cinnamon
  • 1 tsp ground cloves
  • 1 tsp ground nutmet
  • 1 c powdered milk
  • 1 c unsalted butter
  • 3/4 artificial granulated brown sweetener
  • 3 eggs
  • 2 c canned pure pumpklin
  • 2 tbsp grated lemon peel
  • 1 tbsp vanilla
  • 2 c buttermilk
  • 2 tbsp sugar

Preparation

Step 1

Preheat oven to 324F. Butter two 5x9 inch metal loaf pans.

Stir first 7 ingredients together into medium bowl. Add powdered milk. Cream butter in electric mixer until light and fluffy. Add sweetener and mix quickly.

Beat in eggs, one at a time, mixing well after each addition.

Beat in pumpkin, lemon peel and vanilla. Add flour mixture and buttermilk alternately ending with flour mixture.

Transfer the batter to both pans evenly and smooth the top of each and sprinkle each cake with 1 tbsp of sugar.

Bake in oven until toothpick inserted into centre of cake comes out clean about 1 hour and 10 minutes. Cool in pan for 30 minutes. Turn out and cool on rack.
