Ingredients

  • 2-1/2 cups all-purpose flour
  • 1 cup sugar
  • 2-1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 eggs, lightly beaten
  • 1 cup buttermilk
  • 1/4 cup butter, melted
  • 1-1/2 cups fresh blueberries

Preparation

Step 1

In a large bowl, combine flour, sugar, baking powder and salt. Combine eggs, buttermilk and butter; stir into dry ingredients just until moistened. Fold in blueberries.
Fill greased or paper-lined muffin cups three-fourths full. Bake at 400° for 20-24 minutes or until muffins test done. Yield: about 1 dozen.
