Ingredients

  • 1.5 lb. ground pork shoulder
  • 1 tablespoon Dijon mustard
  • 2 tablespoons maple syrup
  • 1 teaspoon fresh cracked black pepper
  • 1 teaspoon dried sage
  • 1.5 teaspoons kosher salt
  • 1 shallot, finely chopped

Preparation

Step 1

Combine all ingredients in a medium bowl and wrap tightly with plastic wrap. Chill in the refrigerator at least 1 hour and up to overnight.

When ready to cook, form the mixture into small patties about ¼” thick and 3“wide. Cook in a skillet over med-high heat, turning once, until golden brown and completely cooked through, about 8 minutes total. Transfer the sausage to a serving dish and serve warm
