Fig Salad

Ingredients

  • 8 cups mixed greens
  • 8 fresh or dried figs quartered
  • 1 cup garbanzo beans drained and rinsed
  • 4 cucumbers, diced
  • 1 avocado, cubed
  • 4 tbsp crumbled goat cheese
  • 1 lb boneless skinless chicken breast grilled and sliced into strips
  • DRESSING
  • 8 tsp white wine vinegar
  • 4 tsp fresh squeezed lemon juice
  • 4 tsp dijon mustard

Preparation

Step 1

1. In a bowl comine mixed greens with figs, garanzo beans, cucumber, avocado, goat cheese and grilled chicken

2. Mix dressing and toss with salad
