Ingredients
- 1 3/4 cups ap flour
- 1 1/4 cups sugar
- 1 tbs baking powder
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ground ginger
- 1/4 tsp allspice
- 1/8 tsp cloves
- 1 cup pureed pumpkin
- 1/2 cup soy milk
- 1/2 cup veg oil
- 1 tbs molasses
Preparation
Step 1
Preheat oven to 400
Lightly grease 12 muffin tin
Sift together flour sugar, baking powder, salt & spices
In separate bowl whisk together pumpkin, soy milk, oil & molasses
Pour the wet ingred into the dry ingred & mix
Fill muffin cups 2/3 full
Bake 18 - 20 mins, til toothpick inserted on center comes out clean
variations:
fold in 1 cup of either chopped fresh cranberries or chopped walnuts, or a mixture of the two
