Ingredients

  • 2 c. penne pasta, uncooked
  • 1 pound Italian pork sausage links
  • 1/2 c. red bell peppers, julienned
  • 1/2 c. yellow bell peppers, julienned
  • 1/2 c. green bell peppers, julienned
  • 1 t. dried basil
  • 3 garlic cloves, minced
  • 1/4 t. dried oregano
  • 1/4 t. dried thyme
  • 1/4 t. caraway seeds
  • 1 T. olive oil
  • 2 cans diced tomatoes (14 1/2 oz.)

Preparation

Step 1

Cook pasta according to package directions. In a large non-stick skillet, brown sausage over medium heat; drain. Cut sausage into 1/4 inch slices. In the same skillet, sauté the peppers, basil, garlic, oregano, thyme, caraway seeds and sliced sausage in oil until peppers are crisp-tender. Stir in tomatoes. Cook and stir until heated through. Drain pasta; add to skillet and mix well. 5 servings.
