Crunchy Honey-Mustard Tilapia

Ingredients

  • 4 tilapia fillets (4-5 ozs. each)
  • 2 T honey
  • 1 T Dijon mustard
  • 2 t soy sauce
  • 2 t grated orange rind
  • 3/4 c lightly crushed cornflakes
  • 1/2 t white pepper
  • 2 T melted butter
  • 1 t chopped fresh parsley

Step 1

Heat oven to 350F. Lighly oil an 8x8 glass baking dish.

In a small bowl, whisk together honey, mustard, soy sauce and grated orange rind. Using a pastry brush, slather both sides of the tilapia fillets with the mixture.

MIx cornflakes and white pepper in a pie plate. Press each fillet in the crumbs, coating well on both sides. Place the fish in prepared pan and drizle each fillet with melted butter. Bake 18-20 mins, just until fish can be flaked.

Remove from oven and sprinkle with fresh parsley.
