Cornbread 'Iron Skillet' Kathy's Favorite

Ingredients

  • 2 eggs
  • 2 cups buttermilk
  • 1/4 cup oil
  • 1/2 cup water
  • 2 cups cornmeal
  • 2/3 cup flour
  • 4 tsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 2 tbls. oil, for the pan

Preparation

Step 1

Heat oven to 450.
In bowl beat eggs then add buttermilk and water. Then add dry ingredients, mixing well.
Pour 2 tbs of oil into 10 inch cast iron pan and place on top of the stove to heat for 2 to 3 minutes or put in oven and heat. Pour cornbread mixture into hot skillet. Put in the oven and bake for 20 to 25 minutes. Serve hot with butter.
