Ingredients
- 6 cups chopped croissants
- 1 pound applewood smoked bacon slices, coarsely chopped
- 2 3/4 cups chicken broth
- 1/4 cup (1/2 stick butter)
- 1 large onion, finely chopped
- 3 granny smith apples finely chopped
- 1 cup finely chopped celery
- 1 teaspoon coarse kosher salt
- 2/3 teaspoon freshly ground black pepper
- 4 large eggs, beaten to blend
- 2/3 cup chopped fresh italian parsley
- 1 teaspoon thyme
Preparation
Step 1
1. Preheat oven to 350. Spread bread cubes on 2 large rimmed baking sheets. Toast until light golden and crisp around edges, about 20 minutes. Cool completely.
2. Preheat oven to 375. Fry bacon. Remove bacon from pan when crisp. Keep half of the grease in the pan and saute the celery, onion, and apple until tender.
3. In a large bowl mix bread cubes, vegetables, bacon, spices, and parsley together. Next add eggs and mix well. Add enough of the chicken broth to moisten. Place in a greased 13*9*2 baking dish and bake in oven until golden brown and set about 1 hour.
