Ingredients
- 8 eggs
- 8 potatoes, diced
- 1 medium onion, diced
- olive oil - 2-3 Tbsp or more
Preparation
Step 1
Cook onion and potatoes in oil, slowly, til done, but not brown. Add salt and pepper to taste.
Beat eggs and add to mixture.
Cook like an omelet, turn over when it is pretty firm.
