Ingredients

  • 2 lbs gr. turkey
  • 2 14 oz cans tomato sauce
  • 2 lg. carrots, grated
  • 1 lg. onion, diced
  • 4-6 garlic cloves, minced
  • 2 Tbsp olive oil
  • 2 tsp dried oregano (use more if using fresh)
  • 2 tsp poultry seasonings
  • Garlic salt and pepper to taste

Step 1

Take the turkey out of the fridge and bring to room temp while prep the onions, garlic and carrots.

Sautee onions and garlic in olive oil over medium heat in large skillet until soft but not browned. Remove from pan and set aside.

Increase heat to medium high and brown turkey. You want the turkey caramelized on both sides – best to form turkey into patties and brown 1 side for approx 4 min than flip and brown the other side. Once browned use the flat edge of a wooden spoon or spatula to break the meat into chunks. Add the onions and garlic mixture, garlic salt and pepper and continue to crumble the meat.

Add the tomato sauce and 2 cans of water and bring to boil. Add carrots, oregano, and poultry seasoning, reduce heat to low, and simmer for 1+ hours until sauce has reduced and thickened to paste like consistency. Adjust seasonings as needed and serve with tortillas or over rice.
