Ingredients
- 1 lb smoked sausage, cut into 1" slices
- 1/4 cup vegetable oil
- 1/4 cup all-purpose flour
- 5 stalks celery, chopped
- 2 cups cubed cooked turkey
- 4 cups water
- 1 t gumbo file
- 1/2 t salt
- 1/4 t pepper
- Hot cooked rice
Preparation
Step 1
Brown sausage slices in a large skillet stirring well.
Drain on paper towels, set aside.
Combine oil and flour in a large Dutch oven.
Cook over medium heat, stirring constantly, 10-15 minutes or until mixture (roux) is the color of a copper penny. Stir in celery and onion, cook 5 minutes.
Stir occasionally.
Add sausage, turkey and water.
Bring to a boil, reduce heat, simmer uncovered for 4 hours.
Stir in gumbo file, salt and pepper.
