Ingredients
- 1 1/2 lbs summer squash (zucchini), diced or sliced
- 1 medium onion, chopped
- 2 T butter
- 1 can green chilies
- 2 T flour
- 1 t salt
- 1/2 t black pepper
- 1 1/2 cup Mntey Jack cheese
- 1 egg
- 1 cup cottage cheese
- 2 T chopped parsley
- 1/4 cup Parmesan cheese
Preparation
Step 1
Sauté squash and onion in butter.
Fold in flour, chilies, salt & pepper.
Sprinkle with Montery Jack cheese.
Place in casserole dish.
Combine egg, cottage cheese and parsley. Layer over cheese, sprinkle with Parmesan cheese.
Bake uncovered at 400 degrees for 25-30 minutes.
