Creme of Broccoli Soup

  • 4 cups of chicken broth
  • 1 large head of broccoli(3 cups Chopped)
  • 1 teaspoon onion powder
  • 1 bay leaf
  • 1/4 teaspoon pepper
  • 1/4 cup flour
  • 2 ounces of diced ham
  • 1/2 cup heavy cream



Step 1

Stir together in a large stock pot chicken broth, onion powder, bay leaf, salt and pepper add broccoli
heat over high heat watch carefully do not let it scorch
reduce heat once it comes to a boil and simmer covered for half an hour
remove 1/2 of the soup mixture blend in food processor for 20 to 30 seconds
blend in a smaller skillet with the flour
wisk until lump free
pour back into original soup mixture
add the ham ad cream
simmer 15 minutes or until soup thickens to where you want it
