Italian Minestrone

Ingredients

  • 1 cup small pasta shells
  • 2 T evoo
  • 1 onion chopped
  • 2 large cloves garlic finely chopped
  • 2 cans beef broth
  • 1/3 lb green beans, trimmed and cut into 3/4 pieces
  • 1 medium zucchini, quartered lengthwise and cut 1/4inch
  • 1 large tomato seeded and diced
  • 1 cup marinara sauce
  • 2 tsp homemade pesto
  • 1/4 tsp black pepper

Preparation

Step 1

1. Cook shells in a large pot of water, salted, al dente. Drain.

2. Meanwhile, heat oil in large nonstick saucepan. Add onion and garlic, saute over low heat 12 minutes until onion is soft.

3. Add broth, boil. Add green beans and simmer 8 minutes.

4. Add zucchini and simmer 5 minutes.

5. Add tomato, marinara, pesto, pepper and pasta. Heat through 3 minutes.
