Salads: Arugula, Radicchio & Endive

Ingredients

  • 8 cups arugula (about 8 oz)
  • 1 medium head radicchio
  • 5 cups chopped tomatoes
  • 4 heads Belgian endive, sliced
  • Dressing
  • 5 T extra virgin olive oil
  • 2 T red wine vinegar

Preparation

Step 1

Combine first 3 ingredients in a large bowl. Add oil and vinegar and toss to coat. Season with salt and pepper.
