Tiropites (Greek Phyllo Cheese Appetizers)

Ingredients

  • You may add to your taste:
  • 3 eggs
  • 1 lb. feta cheese, crumbled
  • 1 1/2 lbs. ricotta cheese
  • 1 lb. phyllo pastry sheets
  • 3/4 lb. butter, melted
  • 1 tablespoon parsley, finely chopped
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon pepper

Preparation

Step 1

Preheat oven to 375°

Beat eggs until fluffy. Combine cheeses with eggs and blend well. Refrigerate for about 30 minutes. Cut phyllo dough into 3x5 inch strips. Cover dough with a damp towel as you work, so it doesn't dry out. Taking 1 piece at a time, brush with melted butter. Place 1 rounded teaspoon cheese mixture at lower left hand corner and fold to form a triangle as you would fold a flag. Continue folding to end of strip. Place on lightly greased cookie sheet, seam side down. Continue same procedure until ingredients are used up. Using a pastry brush, brush tops with additional melted butter.
Bake 15 to 20 minutes or until slightly crisp and light golden brown.
Tiropites are pretty and tasty. Triangles may be baked frozen or partially defrosted and then baked.
