Ingredients
- 1 1/2 cups copped Roma Tomatoes (6-8)
- 2 Tablespoons diced red onion
- 1 large clove garlic minced
- 2 Tablespoons chopped fresh basil
- 2 Tablespoons olive oil
- 1/2 teaspoon red wine vinegar
- 1/4 teaspoon salt
- dash of pepper
- 1/2 loaf of French Baguette Bread small size in diameter
- 1/4 teaspoon garlic salt
- 2 to 3 sprigs Italian Parsley
Preparation
Step 1
Combine the tomatoes, onion, garlic and basil in a medium bowl
add1/2 tablespoon of oil, vinegar, salt, and pepper and mix well
Cover the bowl and let it sit in the Refrigerator for at east 1 hour
preheat oven to broiler
slice the baguette up on a diagonal about 1 inch thick
combine the remaining 1 1/2 tablespoons of oil with the garlic salt
brush the entire surface of each slice of bread both sides
with the olive oil mixture
broil the slices of bread in the oven for about 1 to 2 minutes or until the bread starts to brown up
arrange the bread like a star or spokes of a wheel on a serving tray
now top each slice of bread with tomato mixture leave the edge of bread with no topping so that it is easier to lift off the platter
