Zuchinni Bread

Ingredients

  • 3 eggs beaten
  • 1 cup oil
  • 2 cups white sugar (can use 1 cup brown/1 cup white)
  • 2 cups grated zuchinni
  • 1 tsp vanilla
  • 3 cups flour plus 3 Tbls
  • 1 tsp cinnamon
  • 1 Tsp Baking Powder
  • 1 Tsp Salt
  • 1 Tsp Soda

Preparation

Step 1

Add the dry ingredients to moist ingredients. Pour into two greased and floured 9x5x3 loaf pans.

Bake at 325 for 1 hour.

Cool 5 minutes. Turn on to rack and cool.
