Onion or Leek and Garlic Broth

Ingredients

  • 1 T canola oil
  • 1 large onion chopped, or 2 medium leeks, white parts only, cut into 1/4 inch rings
  • 4-6 cloves garlic, minced
  • 6 cups water
  • 1/4 cup dry red wine
  • salt to taste
  • 1/8 tsp fresh ground pepper
  • SOOTHING REMEDY FOR THE COMMON COLD

Preparation

Step 1

Heat oil in large heavy saucepan. If using leeks, separate rings and rinse to remove grit. Add onion or leeks and saute over medium heat until golden. Add garlic and continue to saute until the onions brown lightly. Add the water, wine, salt and pepper and bring to boil. Cover and simmer over low heat for 30-40 minutes. You may leave the onions and garlic in if you wish or strain through a fine cheesecloth.
