Black Bean and Tomato Quinoa

Ingredients

  • 2 teaspoons lime or lemon zest
  • 2 tablespoons lime or lemon juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon sugar
  • 1 cup quinoa
  • 1 can black beans, rinsed and drained
  • 2 tomatoes, diced
  • 4 scallions, chopped
  • 1/3 cup cilantro, shopped

Preparation

Step 1

Whisk together lime zest and juice, oil, sugar, salt and black pepper in a large bowl.

Cook quinoa. Add quinoa to dressing bowl and toss until dressing is absorbed, then stir in remaining ingredients. Enjoy!
