Ingredients
- Crumb Topping:
- 1 c. flour
- 3/4 c. uncooked rolled oats
- 1 c. brown sugar
- 1/2 c. melted butter
- 1 t. cinnamon
- Fruit Mixture:
- 4 c. diced rhubarb
- 1 c. sugar
- 2 T. cornstarch
- 1 c. water
- 1 t. vanilla

Preparation
Step 1
Mix together crumb topping until crumbly. Press half of crumbs in bottom of greased 9" square pan. Cover with diced rhubarb.
Combine Sugar, cornstarch and vanilla and cook on stove top or in microwave until thick & clear. (Must stir on stove top, and be careful not to superheat in microwave.) Stir in vanilla.
Pour over rhubarb. Top with remaining crumbs.
Bake 350 for 1 hour.
